making vanilla soymilk
making elderberry syrup
3 cups water, 1/2 cup dried elder berries, 1 cup honey (I used organic raw honey)
1- Place the berries in a saucepan and cover them w/ the 3 c. water. Boil then simmer for 30 mins.
2- Smash berries (I used a potato masher) strain with cloth. Add the 1 c. honey to the remaining liquid.
Bottle and store. Will last up to 1 month in fridge.
The weather's been shifting to much more normal slightly chillier temps. So elderberry syrup is super good to have on hand. I've got to get a few more plants started in the greenhouse in the sunporch! Today I'm going for a walk with little Iris and a friend and her doggie.
